I remember my great Aunt Joan would often make this recipe during summer months and I loved it. You can imagine how delighted I was to find it in her old wooden recipe box.

Recipe

Add diced potatoes to a 6-quart stock pot. Cover with water and boil potatoes until just tender – about 15 min. Drain and refrigerate until cold.

Add potatoes to a large bowl along with all other ingredients EXCEPT BACON.

Mix gently.

Chill in refrigerator for at least 3 hours.

Just before serving, stir in the bacon.

Garnish with more hard-boiled eggs, if desired.

Ingredients

5 mediumcooked potatoes, peeled, cold and diced
1/2 cupMarzetti® Original Slaw Dressing
3eggs, hard boiled, shelled, cold and chopped
8 slicescooked bacon, crumbled
1/4 cupsweet pickle relish
1/2 cupcelery, chopped
Salt and pepper to taste
