Broccoli Casserole

This classic has stood the test of time; it’s right up there Green Bean Casserole. This recipe is from my dear Aunt Kathy who’s born and bred in North Carolina (which automatically qualifies her as a wonderful cook).

Recipe

Preheat oven to 350 degrees F.

Microwave broccoli according to package instructions & drain.

While broccoli steams, stir together all other ingredients, except cracker topping. Season with salt and pepper, as desired.

In a separate bowl, combine crushed Cheez-It crackers with melted butter.

Once drained broccoli has cooled a bit, add & stir into liquid mixture.

Pour into a casserole dish. Sprinkle buttery cracker topping over the top.

Bake 25 minutes. Casserole should be bubbly around the edges.

Ingredients

1 package (14 ounces)frozen broccoli steamable florets
1/2 of a 10.5 ouncecan of cream of mushroom soup, undiluted
1/2 cupsharp cheddar cheese, grated (buy a block and shred)
1egg
Dash oftobasco sauce
1/2 cupmayonnaise
1 tspgrated onion (use a cheese grater)
Salt and pepper (to taste)

Tips for this Recipe

  • There are a million versions of this recipe out there, but I really love this one for its simplicity and ordinary ingredients.  
  • KEY here is to use Cheez-It crackers for the topping. It adds a special crunch and richer flavor.
