By far my favorite Queso Dip recipe. The reason? Sausage. It adds an unexpected — yet wonderful — flavor and heartiness that complements the smooth Velveeta perfectly.

Recipe

Brown sausage and onion in a large skillet (non-stick works best here), breaking sausage up as you go. Once browned, drain off as much of the fat as you can.

Cut the Velveeta cheese block into cubes and add along with the Rotel (juice and all) and the 2 cans of green chilis (juice and all).

Cover and cook over low heat (anything higher with burn) until cheese melts and dip is smooth and creamy. Serve warm with tortilla chips. Ole!

Ingredients

1 lbbreakfast sausage in the roll (such as Bob Evans or Jimmy Dean, mild or hot)
1 mediumyellow onion, finely diced
1 (2 lb) packageVelveeta cheese (found on the grocery store shelf, not in the refrigerated section)
1 can (10 ounces)Rotel Diced Tomatoes & Green Chilis
2 small cans (4 ounces each)chopped green chilis

Tips for this Recipe

  • Since it serves up to 15, I like taking this dip office parties or large gatherings. It’s always an instant hit.
  • This dip also freezes well. Let it cool, then split it up into 2 or 3 Ziploc bags and store it in the freezer.
