Like a lot of cash-strapped college students, I was always looking for creative ways to eat cheap – and decently healthy. So, I was thrilled when my grandmother, having grown up in the Great Depression, shared this recipe with me.
In a large bowl, combine all ingredients except oil. Mix well.

Shape tuna mixture into 10 1-inch-thick patties.

Heat 1 tbsp of vegetable oil in a large skillet over medium heat,

Working in batches, place patties in skillet in a single layer.

Fry patties until golden brown, about 3-4 minutes each side. Transfer cooked patties to a plate and cover loosely with foil to keep warm.

Wipe out skillet and repeat with remaining 1 tbsp vegetable oil and patties. Serve warm. Store any leftovers in the refrigerator. To re-heat, microwave for about 1 min.

1/2 smallonion, finely chopped
1/2 tsppepper
2 tbspvegetable oil

KEY here is to use Cheez-It crackers for a richer flavor.
While a bit unusual perhaps, I love serving these with ranch dressing.
